🍝 Lasagne
Also known as: Lasagna, Lasagne al forno, Lasagne alla bolognese, Lasagne verdi
A baked dish of pasta sheets layered with sauce and cheese; the Accademia Italiana della Cucina gives a recipe for lasagne verdi alla bolognese with spinach dough, ragù, bechamel and Parmigiano Reggiano.
Lasagne are a baked pasta dish in which sheets of pasta are layered with sauce and cheese. The Accademia Italiana della Cucina publishes a recipe for lasagne verdi alla bolognese, the Emilia-Romagna version, for four people.
The dough is made from 350 g of '00' flour, 2 eggs and 200 g of boiled, squeezed and finely chopped spinach, and is rolled into a light green sheet that is not too thin. The filling uses 500 g of classic Bolognese ragù, 200 g of grated Parmigiano Reggiano, 350 (g) of bechamel, 100 g of butter, salt and pepper.
The sheet is cut into rectangles of 15 x 10 cm, boiled in salted water and lifted out as soon as they float, dipped briefly in cold water and dried on a cloth. In a buttered dish they are layered with ragù, bechamel, butter flakes and Parmigiano, pricking each layer three or four times with a toothpick; there are at least six layers, finished with a sheet topped with ragù, bechamel, butter and Parmigiano. The dish is baked for about 30 minutes at about 180 °C, with the grill for no more than two minutes if a light browning is wanted, and rests for five minutes before serving in upright portions.
