Also known as: North Holland Gouda

Noord-Hollandse Gouda is a Dutch PDO Gouda cheese made from cow's milk of the province of North Holland.

Noord-Hollandse Gouda is a Dutch semi-hard Gouda-type cheese made from cow's milk of the province of North Holland. Since 1996 the name has been protected in the EU as a PDO (Protected Designation of Origin, eAmbrosia file PDO-NL-0314).

Unlike Gouda Holland, for which milk from anywhere in the Netherlands is enough, here both the milk and the production are tied to North Holland with its polders and lush pastures. This is the Gouda traditionally shown at the famous cheese market in Alkmaar.

The milk is set with rennet and starter culture, the curd is washed, pressed into wheels with convex sides, salted in brine and matured in the region, from a few weeks to a year or more.

Young Gouda is creamy and supple; aged Gouda is firm, with crystals and a caramel and nutty taste.

How to eat it: on bread, in toasties, on a cheese board with nuts. Beer, white and red wines go with it (see Wine and cheese).

The cheese belongs to Semi-hard cheeses, to Gouda and to Dutch cheeses; it is made from cow's milk.

Why it matters to you: the PDO guarantees that Noord-Hollandse Gouda was made from North Holland milk following the approved specification.
