Mulled wine
How to make it at home: Mulled wine — ingredients, steps, safety tips.
Time: about 50 minutes, 15 of them on the heat · Yield: 6 servings
Ingredients
- 750 ml red wine (1 bottle)
- 1 large cinnamon stick or 2 small ones
- 2 star anise
- 4 cloves
- 2 strips of lemon zest
- 4 tbsp caster sugar
Method
- Put the wine, cinnamon, star anise, cloves, zest and sugar into a pan.
- Warm over a low heat for 10 minutes, stirring until the sugar dissolves.
- Take off the heat and leave to infuse for about 30 minutes.
- Reheat before serving without letting it boil. Add a splash of sloe gin if you like.
Tips
- In the EU the name Glühwein may only be used for a drink made from red or white wine, flavoured mainly with cinnamon and/or cloves, at least 7 % ABV and with no added water. A version made from white wine is labelled “white”.
- Mulled wine is never boiled, so much of the alcohol stays in it: according to the USDA table, even alcohol added to a boiling liquid and taken straight off the heat keeps about 85 %.
