Time: 50 minutes, 20–30 of them simmering · Yield: 6 servings
Ingredients
- 6 pears
- 1 bottle red wine (750 ml)
- 225 g caster sugar
- 1 vanilla pod
- 1 cinnamon stick
- a sprig of thyme
Method
- Peel the pears, keeping them whole with their stalks.
- Split the vanilla pod lengthways and scrape the seeds into a pan; add the wine, sugar, broken cinnamon, thyme and the pod halves.
- Lower in the pears so the wine covers them, put on a lid and simmer for 20–30 minutes.
- The pears are done when a skewer slides right through. They can be cooked up to 2 days ahead.
- Lift out the pears and boil the syrup until reduced by half.
- Serve the pears with the cooled syrup.
Tips
- According to the USDA table, about 40 % of the alcohol remains after 15 minutes of stirred simmering and 35 % after 30 minutes.
