🥃 Rectified concentrated grape must

Grape product ✔ Checked: 10.2026 · sources: 2 Updated:

A purified, nearly colourless syrup from must, essentially grape sugar.

Rectified concentrated grape must is a purified, almost colourless and tasteless syrup made from grape juice. In essence it is grape sugar in liquid form. Acids, colour, aroma and other impurities are removed from the must, and then water is evaporated.

What is it for? It raises the strength of wine or adds sweetness. In countries and areas where grapes do not always ripen fully, raising the alcohol level of wine is allowed. In the past beet or cane sugar was often used for this, while rectified must comes from the grapes themselves, so it is regarded as a more "grape-based" method.

The rules in the European Union are strict. The product must contain at least 61.7 percent sugar as read by a special instrument, a refractometer. All these requirements are set out in the regulation on the wine market.

Rectified must is close to plain concentrated must. The difference is that it is purified and does not add a taste of its own to the wine.
