🧀 Rigotte de Condrieu
Rigotte de Condrieu is a French PDO soft goat's cheese made from raw full-fat milk in the Massif du Pilat: a small puck with ivory, white and blue surface mould.
Rigotte de Condrieu is a French soft goat's cheese with a protected designation of origin (PDO), made from raw full-fat goat's milk in the Massif du Pilat, south-west of Lyon, in the Rhône and Loire departments.
According to the product specification, it is a small unpressed cheese made from curdled milk. After the minimum ripening of 8 days from removal from the mould, it is a round puck 4.2 to 5 cm across and 1.9 to 2.4 cm high, weighing at least 30 g. The surface mould is ivory, white and blue; the paste is white or ivory, firm and smooth. It has at least 40 g of fat per 100 g of dry matter. The taste recalls hazelnut, vegetation and whey, and is moderately salty.
The goats graze or receive green fodder from the area for at least 120 days a year. The milk is produced, and the cheese made and ripened, within the area. Each cheese, or at least each sales unit, carries an individual label with the PDO name and the EU PDO logo. The name was registered in the EU in 2013.
