🧀 Selles-sur-Cher
Also known as: Selles-sur-Cher cheese
Selles-sur-Cher is a French PDO goat's cheese from raw whole milk: a flat, slightly truncated disc about 9 cm across, coated in vegetable carbon.
Selles-sur-Cher is a French goat's cheese with a Protected Designation of Origin (PDO), made exclusively from raw, whole goat's milk of the Alpine or Saanen breed or a cross of the two. According to the single document, it is a cheese of lactic character.
The cheese is a slightly truncated, flattened disc with bevelled edges, about 9 cm in diameter and 3 cm thick, coated in vegetable carbon. The rind is a more or less uniform ash grey. The ivory-white paste is matt, smooth and homogeneous, with a solid, thin, even rind. The scents of fresh goat's cheese take on a hint of mushroom and goat towards the end of maturity; the texture is fresh and melt-in-the-mouth, and the taste balances salty, acid and bitter notes.
Fat is at least 45 g per 100 g of dry cheese, and each cheese must contain at least 55 g of dry matter. Minimum maturing is 10 days after renneting. At least 75% of the goats' annual ration must come from the production area, and genetically modified crops are banned on the holdings.
Milk is produced, and the cheese made and matured, in a defined set of cantons in the departments of Cher, Indre and Loir-et-Cher. The name Selles-sur-Cher must appear on the label in characters at least two-thirds the size of the largest ones, together with the EU PDO logo.
