🇸🇰 Slovak cheeses

Category ✔ Checked: 10.2026 · sources: 5 Updated:

Slovak cheeses are mostly sheep's milk and smoked cheeses from mountain shepherd huts — bryndza, oštiepok, parenica and korbáčik; 9 names are protected in the EU.

Slovak cheeses are above all sheep's milk cheeses from mountain pastures: bryndza, oštiepok, parenica, korbáčik and smoked pasta filata cheeses. This page gathers the country's protected names and best-known varieties.

The tradition was shaped by the shepherd huts (salaš) of the Carpathians — Liptov, Orava, Zázrivá, the High and Low Tatras. In summer, shepherds turned sheep's milk into lump cheese (hrudkový syr), the base for both bryndza and the stretched cheeses. Today cow's milk is often added to sheep's milk, and most factory cheeses are made from cow's milk.

Main styles. Bryndza is a soft, salty spreadable cheese made from matured sheep's lump cheese; it is eaten with potato dumplings (bryndzové halušky). Oštiepok is a pressed, egg-shaped cheese with a carved pattern, often smoked — a close relative of Polish Oscypek. Parenica is a pasta filata cheese stretched into a ribbon and rolled into a spiral; korbáčik and vojky are braids and strings made from the same curd.

The EU register eAmbrosia lists 9 protected Slovak cheese names. There is one PDO, Liptovská bryndza, and eight PGIs: Slovenská bryndza, Slovenský oštiepok, Slovenská parenica, Oravský korbáčik, Zázrivský korbáčik, Zázrivské vojky, Klenovecký syrec and Tekovský salámový syr, a semi-hard cow's milk cheese shaped like a salami.

How to choose and serve. Look for the registered name and the PDO or PGI logo on the label. Keep bryndza chilled and eat it soon; smoked parenica and korbáčik are served as a snack with beer or wine, oštiepok sliced or grilled.

Why it matters to you: knowing which milk and which region a Slovak cheese comes from helps you tell real bryndza from a blend and pick the right cheese for a dish, from dumplings to a cheese board.

Frequently asked questions

What are the most famous Slovak cheeses?

Bryndza, oštiepok, parenica and korbáčik. All of them come from the shepherd tradition of the mountain huts.

How is Slovak bryndza different from brined bryndza?

Slovenská bryndza is a soft spreadable cheese made from crumbled, matured sheep's lump cheese, not a block kept in brine as in many other countries.

How many Slovak cheeses are protected in the EU?

The eAmbrosia register lists 9 names: 1 PDO, Liptovská bryndza, and 8 PGIs, including Slovenský oštiepok and Slovenská parenica.

Is it true that oštiepok and oscypek are the same cheese?

No. They look alike and are both smoked, but Slovenský oštiepok (PGI) and Polish Oscypek (PDO) have separate specifications, regions and milk rules.

How do you eat parenica and korbáčik?

Cold, as a snack: parenica is sliced or unrolled as a ribbon, korbáčik is pulled apart into strings. Smoked versions go well with beer, dry wine and fresh vegetables.
