Also known as: Slovak bryndza

Slovenská bryndza is a Slovak PGI soft spreadable cheese made from sheep's lump cheese or a blend with cow's milk cheese, ground with salt.

Slovenská bryndza is a soft spreadable cheese made in Slovakia from sheep's lump cheese or from a blend with cow's milk lump cheese in which sheep's cheese makes up more than half. The name is protected in the EU as a PGI (eAmbrosia file PGI-SK-0427).

First a lump cheese (hrudka) is made on mountain sheep farms and in dairies. It is matured, then crumbled, ground and mixed with salt. Finished bryndza is white or slightly yellowish and spreadable, with a tangy, salty taste and a clear sheep's cheese aroma; the more sheep's cheese it contains, the sharper the taste.

Bryndza has been made in Slovakia for several centuries, since Wallachian shepherds settled the mountains with their flocks. It is the key ingredient of the national dish, bryndzové halušky.

On this site it belongs to the fresh cheeses and to the cheeses of Slovakia. A narrower protected name is Liptovská bryndza (PDO), made from sheep's cheese only; a related cheese is Bryndza Podhalańska.

How to eat it: in halušky with crispy bacon, in pierogi, or as a spread with onion and paprika. Drink ideas are on Wine and cheese.

Why it matters to you: only bryndza made in Slovakia from mainly sheep's cheese to the PGI specification may be sold as Slovenská bryndza.
