Also known as: Allgäu Emmental

German PDO hard cheese from raw cow's milk from the Allgäu, the local branch of Emmental, milder after at least 3 months of ripening.

Allgäuer Emmentaler is a German hard cheese made from raw cow's milk in the Allgäu, in southern Bavaria and Baden-Württemberg. It is the local branch of the Swiss Emmental: the same round holes and big wheels, but a shorter ripening of at least 3 months, which makes it milder. The name has been an EU PDO since 1997. 145

How Swiss cheese came to Bavaria. Swiss alpine herders brought the know-how to the Allgäu around 1821. It took root because the land suited it: the EU file says the geology and climate resemble Switzerland's Emmental, and rainfall and altitude helped draw the area's borders. So the cheese was not copied at random, it moved to similar country. 4

Why raw milk and 40 °C. Only raw milk from the area may be used, and it may not be heated above 40 °C before rennet goes in. German consumer testers explain why this matters for the Swiss original: at that temperature the milk's microbes survive and build the spicy, nutty aroma. 345

Where the holes come from. Within the 3 months of ripening, at least 4 weeks pass at 20 °C or more in a warm fermentation cellar. In Emmental cheese, gases from propionic acid bacteria form the holes, which is why a warm stage is part of the process. The rules ask for round eyes of 1–3 cm, evenly spread, sparse to plentiful. 345

Size and look. A round wheel weighs at least 60 kg at production and a rectangular block at least 40 kg. It is a full-fat, rind-ripened cheese with at least 62 % dry matter, and its surface looks matt to shiny. The area covers the districts of Lindau, Oberallgäu, Ostallgäu, Unterallgäu, Ravensburg and Bodenseekreis, plus Kaufbeuren, Kempten and Memmingen. 34

Allgäuer or Swiss? Both use raw milk heated to no more than 40 °C. The main difference is time: at least 3 months here against at least 4 for Swiss Emmentaler, so the Allgäuer tastes milder. Plain “Emmentaler” is a third thing, a standard type that can be made anywhere. 56

Why it matters to you. Look for “Allgäuer Emmentaler” with the PDO seal if you want this cheese, because the whole production must stay in the region. Choose it over Swiss if you prefer a milder taste. It is a raw-milk cheese, so check first if you avoid those. 15
