🥞 Blini
Also known as: pancakes, crêpes
A batter made with milk.
Blini are thin or fluffy pancakes made from a runny batter and fried in a pan. They are a traditional dish of East Slavic cooking. The batter is made from flour and milk, often with eggs. Sometimes kefir, soured milk or water is used instead of milk.
In the old days, blini were made with yeast. These blini are fluffy. They were often made with buckwheat flour; today wheat flour is more common. There are also thin blini without yeast, made with milk and eggs. They are easy to roll around a filling. A rough ratio for thin blini: for one cup of flour, about two cups of milk and one or two eggs.
Blini are made for Maslenitsa, a festival that sees off winter. People eat them with sour cream, butter, jam, honey, curd cheese or caviar. Sweet and savoury fillings are wrapped in them. Other cuisines have similar thin pancakes, such as French crêpes.
