🧀 Dodoni Whey Cheeses
Also known as: Dodoni Anthotyro, Dodoni Myzithra
Dodoni Whey Cheeses is the range of Greek whey cheeses from Dodoni in Epirus: soft anthotyros and dry myzithra.
Dodoni Whey Cheeses is a range of Greek whey cheeses made by the company Dodoni in Epirus. In Greek it is called "Τυριά τυρογάλακτος", meaning cheeses made from whey.
Whey cheeses are made not from the curd itself but from the whey (τυρόγαλα) left over after making other cheeses: it is heated, its proteins coagulate and are collected. This is how anthotyros and myzithra have long been made in Greece.
The range has two cheeses. Dodoni anthotyros is a soft, fresh and light cheese; its ingredients are whey, pasteurised sheep's, goat's and cow's milk, cream and salt. Per 100 g it provides 201 kcal, 15 g of fat and 13 g of protein. It is sold by weight at the deli counter. Dodoni dry myzithra is a very hard cheese made from whey, cream, pasteurised sheep's, goat's and cow's milk and salt; it is much saltier and denser and comes in a 700 g pack.
How to use them: add anthotyros to salads, pies, ravioli and even cheesecake, and grate dry myzithra over pasta and hot dishes for a strong flavour. Keep refrigerated.
