🇬🇷 Greek cheeses
Cheeses of Greece such as Feta, Graviera, Kefalotyri and Mizithra are made mostly from sheep and goat milk, and 25 Greek cheese names are protected in the EU as PDO or PGI.
Cheeses of Greece are the cheeses made across the Greek mainland and islands, from brined Feta to hard Graviera and whey cheeses such as Mizithra. Most are made from sheep milk and goat milk: in a mountainous country with dry summers, flocks graze where cows would find little grass. 1
The main cheese regions are Epirus, Macedonia, Thessaly, the Peloponnese, Crete and the Aegean islands such as Naxos, Lemnos and Lesbos. Many cheeses are still made by small dairies from the milk of local flocks. 1
Main styles. Brined cheeses: Feta matures in salted brine for at least two months and is made from sheep milk with up to 30% goat milk. Hard cheeses: Graviera is sweetish and nutty, with separate protected names for Crete, Naxos and Agrafa; Kefalotyri and Kefalograviera are salty and sharp, grated over dishes or fried. Pasta filata cheeses: Kasseri and the smoked Metsovone. Whey cheeses: Mizithra, Manouri and the sour Xynomyzithra of Crete. Spreadable cheeses: Kopanisti, Katiki Domokou and Galotyri. 13
What the names tell you. The names often explain the cheese. Kalathaki Limnou means "little basket", because it is shaped in small basket moulds. Ladotyri is stored in olive oil, hence the word. Pichtogalo means "thickened milk", and batzos is named after the hut of the nomadic shepherds who made it. Graviera comes from Swiss Gruyère but resembles it only in name. Soft, soured cheeses were made in summer, when milk is richer and warmth speeds fermentation. 6
Why cow's-milk cheeses are so few. Mountains, heat and dry summers favour sheep and goats, so cows are the exception here, and each exception has its story. According to one magazine account, Venetian monks brought cows to Syros in the 1500s, which gave San Michali. Naxos, also under Venice, gained cow's-milk graviera, and Metsovone from Epirus follows Italian provolone. So a cow's-milk cheese with a protected Greek name reflects the rules of its place, not a substitute milk. 16
In the EU register eAmbrosia, Greece has 25 protected cheese names: 23 PDO and 2 PGI (Kashkavali Pindou and Krasotiri Ko). Each may only be made in its own area under an approved specification; the legal basis today is Regulation (EU) 2024/1143. By number of protected cheese names, Greece is fourth in the EU after France (58), Italy (56) and Spain (32). Nineteen names were protected together on 21 June 1996, feta followed in 2002, and newer ones came later: Xygalo Siteias 2008, Arseniko Naxou 2017, Krasotiri Ko 2018, Kashkavali Pindou 2021, Tsalafouti 2023. 12
Why feta weighs the most. According to the state body ELGO, 80 % of the country's sheep's and goat's milk goes to feta: 123,000 tonnes in 2018. ELGO links it to more than 100,000 farming families, so the life of mountain areas depends on it. That is why the argument over the name is no small matter for Greece: outside the EU the market is full of similar cheeses, and by the same body's estimate about 98 % of white brined cheese in the US is imitation. 35
How to choose and serve: look for the name Feta with the PDO mark; in the EU a white brined cheese made from cow's milk cannot be sold under that name. Keep feta in its brine in the fridge. Serve Graviera with honey or wine, fry Kefalograviera as saganaki and grate dried Mizithra over pasta. 3
Why it matters to you: knowing the region and the milk helps you pick the right cheese for the dish — brined for salads, hard for baking, whey cheese for desserts — and tell a protected Greek original from an imitation. A protected name does not show quality in general but a specific place and rules, so one cheese will not replace another: feta, kashkavali and galotyri give different results in a dish. Check the type of milk on the label if you avoid cow's or goat's. 1

Frequently asked questions
What are the most famous Greek cheeses?
Feta, Graviera, Kefalotyri, Kefalograviera, Kasseri, Mizithra and Manouri.
How many Greek cheeses have a protected name?
The EU register eAmbrosia lists 25 Greek cheese names: 23 PDO and 2 PGI.
What milk are Greek cheeses made from?
Mostly sheep and goat milk or a mix of both. Cow's milk is used less often, for example in Graviera Naxou.
Is it true that feta can be made from cow's milk?
No. Feta is a PDO: only sheep milk with up to 30% goat milk from defined areas of Greece. In the EU a white brined cheese from cow's milk cannot be sold as feta.
How should feta be stored?
In its brine in a closed container in the fridge; without brine it dries out quickly. To make it less salty, soak it briefly in water before serving.
