Protected spirit name ✔ Checked: 10.2026 · sources: 5 Updated:

Slovenian fruit spirit with an EU geographical indication: a fermented mash of apples and pears (sometimes plums) from orchards in Dolenjska, distilled in copper pot stills or columns; 37.5–48% ABV, colourless.

Dolenjski sadjevec is a Slovenian fruit spirit made from fermented mixed fruit grown and processed in the Dolenjska region. The base is apples and pears, to which plums may be added. The name is protected in the EU as a geographical indication in the fruit-spirit category; the strength ranges from 37.5 to 48% ABV.

Rules. The current requirements were set by the rulebook in Uradni list RS 117/2008, which replaced the earlier rules of 2003. The fruit must come from orchards with low-input or integrated production and must be ripe; ripeness is checked with an iodine starch test. The mix of several fruits gives the spirit a distinctive aroma and taste.

Region. The zone lies on the right bank of the Sava, from Breg near Litija to Bregana and on along the Gorjanci ridges. This is the same Dolenjska that is known for the light cviček wine. Sadjevec is sold only in factory packaging, with the number of the body that confirmed compliance.

How it is made. The fruit is crushed, yeast is added, and the mash is fermented for 3–4 weeks without air. The wash is distilled in copper pot stills or a column: the first 1.5–2% is taken off as the head fraction, the heart is collected up to 45% ABV, and the tails go back into the next distillation. The distillate is diluted with water; it should be colourless and clean.

Why this matters to you. The name Dolenjski sadjevec guarantees local fruit, a blend of apples and pears, and factory packaging with checks. Plum spirits or palinka are usually made from a single kind of fruit. WHO reminds that there is no safe amount of alcohol.
