Garofalo Pasta Mista Strapasta
Mix of pasta shapes by Garofalo, made from durum wheat semolina and wheat germ.
Garofalo Pasta Mista Strapasta is a mix of short and broken long pasta shapes from the Garofalo Strapasta range. Garofalo is a pasta maker from Gragnano near Naples, founded in 1789.
Ingredients: durum wheat semolina and defatted durum wheat germ. Strapasta adds durum wheat germ to the semolina; the brand says it has more fibre and protein than its classic pasta. It is drawn through bronze dies, which gives it a rough surface.
Cooking time: 7 minutes. Pack size: 500 g. As with any dry pasta, it is cooked in plenty of boiling salted water, about one litre per 100 g, and drained while still firm to the bite. Mixed pasta is the Neapolitan choice for pasta e patate and for bean and chickpea soups. The same shape is also sold in the Garofalo Pasta Senza Glutine range.
Allergens: contains gluten (wheat).
