Garofalo Pasta Senza Glutine is Garofalo's gluten-free range of dry pasta. It contains no durum wheat: according to the official ingredient list, the dough is made from maize flour, brown and white rice flour, potato starch and quinoa, with maize as the main component.
Garofalo says the gluten-free shapes have the rough texture of bronze-die pasta and keep their shape when cooked.
The range has about 14 products: long spaghetti and linguine; short casarecce, farfalle, fusilli, gnocco sardo, mafalda corta, pasta mista and penne rigate; anellini and ditalini rigati for soups; and lasagne sheets.
The range is meant for people with coeliac disease or gluten intolerance, and for households that want to cook one pasta for everyone.
