Giovanni Rana Gioiaverde is a range of fresh ravioli with vegetable fillings. According to the official site, the dough is fresh egg pasta of soft wheat flour, egg (30% of the dough) and durum wheat semolina. In Gioiaverde Zucca and Gioiaverde Funghi Porcini the dough makes up 40% of the product and the filling 60%.
The range has five fillings: porcini mushrooms, pumpkin, artichoke, asparagus and radicchio. The company says the vegetables are cooked to keep their flavour: the pumpkin, for example, is slow-cooked at low temperature, then mostarda and amaretti biscuits are added as in the traditional recipe. In the Zucca filling, pumpkin purée is 49%, the rest being ricotta, breadcrumbs and dairy ingredients. All the fillings contain dairy products, so the range is vegetarian by its ingredients but not vegan.
Gioiaverde ravioli cook in about 3 minutes in salted water. They are fresh pasta and are kept in the refrigerator. The range suits people looking for filled pasta without meat; it is served with butter or a light sauce.
