Fresh filled pasta: pasta dough enclosing a filling; Garofalo's ricotta and spinach ravioli cook in 2–3 minutes.

Ravioli are a fresh filled pasta: pasta dough enclosing a filling. Garofalo sells its ravioli as fresh filled pasta. Its Ravioli Ricotta e Spinaci have a dough of flour, durum wheat semolina and 10% free-range eggs, and a filling that makes up 60% of each ravioli (ricotta 25%, spinach 13%, with Parmigiano Reggiano PDO, butter, onion and nutmeg). The pack is 250 g and the cooking time 2–3 minutes.

Italian law (DPR 187/2001, art. 9) allows fresh pasta to be made following the rules for durum wheat pasta except for humidity and acidity, permits soft wheat flour, and limits acidity to 7 degrees. Prepackaged fresh pasta must have at least 24% moisture, water activity between 0.92 and 0.97, a heat treatment at least equivalent to pasteurisation and storage at no more than +4 °C; stabilised pasta needs at least 20% moisture and water activity of no more than 0.92.
