Pastai Gragnanesi Pasta a Nido is the nest pasta category of Pastai Gragnanesi, the pasta makers' cooperative founded in Gragnano in 1980. It is dry durum wheat pasta: long flat ribbons rolled into nests.
There are three widths: nidi fettuccine, the narrowest ribbon; nidi fettucce, wider than fettuccine; and nidi pappardelle, wider still than fettucce. All cook in 10 minutes, and the catalogue marks them as bronze-drawn.
According to the cooperative, fettucce take their name from the narrow ribbons used to hem clothes and, like fettuccine, probably come from Lazio. They are recommended with tomato sauce and meat ragù, and also with fish sauces, especially shellfish. Pappardelle suit rich sauces.
The product pages give no full ingredient list; the cooperative makes dry pasta from durum wheat semolina. The site does not label these products as Pasta di Gragnano PGI.
