Long flat pasta ribbons; De Cecco makes them from durum wheat semolina (n° 6) or as egg pasta (n° 103), with cooking times of 11 and 7 minutes.

Fettuccine are long, flat pasta ribbons and, according to De Cecco, belong to the family of long, flat pasta. They are made as dry pasta from durum wheat semolina and water (DPR 187/2001, art. 6) and as egg pasta, which by law contains at least four whole hen eggs and no less than 200 g of egg per kilogram of semolina (art. 8).

De Cecco writes that the origin of this pasta, popular all over Italy under different local names, is not easy to establish; it was probably from Lazio, where it is the pride of regional cooking. The producer recommends it with tomato and meat ragù and with fish sauces, especially shellfish.

De Cecco's semolina Fettuccine n° 6 have a cooking time of 11 minutes, with al dente at 10 minutes; its Egg Fettuccine n° 103 (250 g) take 7 minutes.
