Dry pasta for baking by the Pastai Gragnanesi cooperative: cannelloni, lasagne sheets, lumaconi and conchiglioni.

Pastai Gragnanesi Pasta da Forno is the baking-pasta line of the Pastai Gragnanesi cooperative in Gragnano near Naples. Like the rest of the cooperative's production, it is Pasta di Gragnano made from durum wheat semolina and water and shaped with dies with bronze inserts in its vertical factory.

The official product list groups four formats under "pasta da forno": cannelloni, large tubes to be filled; lasagna a sfoglia, flat sheets for layered lasagne; lumaconi, big snail-shaped shells; and conchiglioni, large shells. All are made to be stuffed or layered and finished in the oven.

In southern Italian cooking, cannelloni and conchiglioni are typically filled with ricotta, spinach or meat and covered with tomato sauce or béchamel, while lasagne sheets are layered with ragù – in Naples often with meatballs, ricotta and fior di latte for Carnival – or with béchamel in the style of Bologna. Lumaconi suit rich fillings and gratin dishes. The line belongs to dry durum wheat pasta.
