Pastai Gragnanesi Pasta Corta

Pastai Gragnanesi Pasta Corta is the short-pasta line of the Pastai Gragnanesi cooperative in Gragnano near Naples. It is Pasta di Gragnano made from durum wheat semolina and water and shaped with dies with bronze inserts.

The product list is one of the longest among Gragnano producers. It includes paccheri and mezzi paccheri, wavy paccheri (8 minutes' cooking according to the product page), calamari rings, millerighe and mezze millerighe, mezzi bombardoni, rigatoni and mezzi rigatoni, fusilloni, tortiglioni, elicoidali, casarecce, occhi di lupo, pennoni, canneroni, maccheroncelli, pennette, penne zite and penne rigate, cut ziti (10 minutes), tubetti, Vesuvio, scialatielli, trofie, orecchiette, taccozzette, trecce, gran riccioli and corone di bronzo, as well as gnocchi napoletani and mista corta for soups.

Large tubes such as paccheri and millerighe are classic with Neapolitan ragù and seafood, ridged penne and rigatoni with tomato and baked dishes, trofie with pesto and orecchiette with vegetables. The cooperative's list also includes farfalle among its laminated pasta. The line belongs to dry durum wheat pasta.
