Pilgrims Choice Cheddar is the cheddar range of Pilgrims Choice: Mild, Mature, Extra Mature and Vintage in blocks, grated and sliced.
Pilgrims Choice Cheddar is the core range of the British brand Pilgrims Choice, owned by the Irish co-operative Ornua. It is cheddar, a hard cow's milk cheese graded by how long it has matured.
The range has four steps: Mild, mellow and creamy; Mature, smooth and full-flavoured; Extra Mature, rich and creamy with crunchy crystals; and Vintage, the longest-aged, with deep savoury flavour and a sweet edge. All come as blocks, and Extra Mature is also sold grated and sliced.
The crunchy white crystals in aged cheddar are calcium lactate, formed during maturing; the brand explains they signal a well-developed flavour. According to Pilgrims Choice, all its ingredients are suitable for vegetarians.
How to use: Mild for children, sandwiches and gentle sauces; Mature and Extra Mature for toasties, bakes, pasta and omelettes; Vintage for a cheese board with apples and chutney.
