Pilgrims Choice Lighter
Pilgrims Choice Lighter is the reduced-fat cheddar range of the British brand Pilgrims Choice, with 30% less fat: Lighter Mature and Lighter Extra Mature.
Pilgrims Choice Lighter is the reduced-fat cheddar range of the British brand Pilgrims Choice, owned by the Irish co-operative Ornua. The cheeses have 30% less fat than standard cheddar of the same maturity.
There are two cheeses in the range. Lighter Mature is a matured cheddar with a rich, creamy taste; the brand suggests it for omelettes. Lighter Extra Mature is matured for longer and has a silky texture and a long-lasting flavour; it is suggested for pasta bakes, topped potatoes and lunches in general. Both are made from cow's milk and sold as blocks.
How to use it: grate it over hot dishes, add it to omelettes, sauces and bakes, or put it in sandwiches. Thanks to the maturing, the flavour stays bold even with less fat; reduced-fat cheese melts a little differently, so it is best added near the end of cooking. Keep it in the fridge.
The brand's main range is Pilgrims Choice Cheddar (Mild, Mature, Extra Mature and Vintage). Cheddar belongs to the hard cheeses.
Why it matters to you: a matured reduced-fat cheddar gives a familiar taste with less fat in the dish.
