Cathedral City Lighter
Cathedral City Lighter is the reduced-fat cheddar range of Cathedral City from the Davidstow creamery in Cornwall: Lighter Mature and Lighter Extra Mature.
Cathedral City Lighter is the reduced-fat cheddar range of the British brand Cathedral City, owned by Saputo Dairy UK. The cheese is made at the Davidstow creamery in Cornwall from cow's milk, using a vegetarian enzyme to set the milk.
There are two block cheeses in the range. Lighter Mature is creamy, smooth and full of flavour. Lighter Extra Mature is bold, firm and intensely rich. Both follow the maturity levels of the main Cathedral City Cheddar range but contain less fat, and so fewer calories; exact figures are on the pack.
How to use it: Lighter Mature works in sandwiches, salads and omelettes; Lighter Extra Mature in bakes, sauces and pasta dishes, where the bold flavour makes up for the lower fat. Reduced-fat cheese melts a little more slowly, so it is best finely grated. Keep the block in the fridge with the cut face tightly wrapped.
The brand also makes Cathedral City Cheddar, Lactose Free and the Snacking range. Cheddar belongs to the hard cheeses.
Why it matters to you: a lighter matured cheddar keeps the flavour of a dish while cutting the amount of fat.
