Settele is a German family company from Neu-Ulm in Bavarian Swabia that makes fresh Swabian specialities. Erwin Settele Senior founded it in 1968 as a wholesaler of Swabian specialities, supplying butchers, hotels and inns. In 1974 its first supermarkets began stocking its products, and in 1982 the company started its own fresh production: spätzle and Schupfnudeln were first made in a former butcher's shop in Oberdischingen near Ulm. In 1985 a new production building opened in Neu-Ulm/Schwaighofen, and in 1988 Erwin Settele Junior took over management of the sales company.
According to the company, it now employs about 350 people, makes more than 120 tonnes of fresh products a day and also supplies neighbouring countries such as Austria, Switzerland, Italy and France, under its own brand and under private labels.
According to the company, Settele is the German market leader for fresh egg spätzle, and its spätzle are ready for the pan. The spätzle range includes scraped egg spätzle (geschabt), Knöpfle, long spätzle, and spelt, spinach, vegan and organic spätzle. The Maultaschen range (filled pasta) includes the Original schwäbische Maultaschen as well as vegetable, vegan, soup and mini Maultaschen; the site mentions the protected geographical indication Schwäbische Maultaschen. The Schupfnudeln (potato finger noodles) come in potato, sauerkraut and vegan versions. Since 1985 the company has also made Dampfnudeln and soup garnishes, which are not pasta.
