Settele Schupfnudeln
Settele's range of fresh, pre-cooked Schupfnudeln from Neu-Ulm: Swabian potato finger noodles with 70% potato, sauerkraut and vegan versions.
Settele Schupfnudeln is Settele's range of fresh Schupfnudeln, the Swabian finger-shaped noodles made from a potato and flour dough. They are produced in Neu-Ulm and sold chilled, already cooked. According to the official site, Kartoffel-Schupfnudeln contain potatoes (70%), wheat flour, starch, durum wheat semolina, salt, rapeseed oil, citric acid and spices; they contain no egg, although traces may occur.
The range includes Kartoffel-Schupfnudeln, Schupfnudeln "Buabaspitzle", Kraut-Schupfnudeln with sauerkraut (also a version without bacon) and vegan potato Schupfnudeln.
Settele recommends frying them in a pan with a little butter until golden brown. They work as a main dish, a side dish or a sweet dish: the company suggests sprinkling the fried noodles with sugar and cinnamon and serving them with apple sauce or compote. Because of the high potato content they are close relatives of gnocchi.
