Cheeses of Spain, from sheep's milk Manchego to blue Cabrales and the goat cheeses of the Canary Islands: regions, milks, styles and 32 EU protected names.

Cheeses of Spain are the cheeses made in Spain, from aged sheep's milk wheels to cave-ripened blues and the goat cheeses of the islands. Unlike most of Europe, sheep's and goat's milk play a very large role here. In 2024 the 32 protected names gave 36,866 tonnes of cheese. 6

The centre is sheep cheese country: Manchego from La Mancha, made from the milk of Manchega sheep, and in Extremadura the soft Torta del Casar, curdled with a vegetable rennet from wild thistle. The Basque Country and Navarre make the sheep's milk cheeses Idiazabal and Roncal. Green northern Spain is cow's milk land: Galician Tetilla and San Simón da Costa, and in Asturias Cabrales, ripened in natural caves. Menorca makes the cow's milk Mahón-Menorca, the Canary Islands the goat's milk Majorero. 1

Why so many names come from sheep and goats. In 2022 cows gave about 89 % of the country's milk, sheep 6 % and goats 5 %. Yet of the 32 protected names only 9 are purely cow's milk, 7 sheep's and 8 goat's, while 8 allow a mix or a choice of milk. So the register shows variety rather than volume: sheep's and goat's cheeses hold on to their places and rules. 168

The main styles are pressed aged cheeses such as Manchego, blue cheeses from the Picos de Europa, smoked cheeses of the north, soft spoonable "tortas" made with vegetable rennet, and fresh cheeses. Many are made from raw milk. 1

Why they differ so much. Each name's rules fix its own technique. Torta del Casar is curdled with a plant enzyme from cardoon, San Simón da Costa is smoked over birch, Cabrales ripens in caves where mould spores arrive by themselves, and Queso de Murcia al vino is bathed in wine. So the same word, cheese, covers very different foods here. 1

The EU register eAmbrosia lists 32 Spanish cheese names: 27 PDO (DOP in Spain) and 5 PGI. Each name is managed by a regulatory council (Consejo Regulador) that checks milk origin and ripening; the agriculture ministry MAPA publishes the national list. 13

What it adds up to. In 2024 the 32 protected names gave 36,866 tonnes of cheese worth 412 million euros. Manchego alone brings 56 % of the value, followed by Arzúa-Ulloa (9.5 %), Mahón-Menorca and Castellano (6 % each). Spain takes 55 % of the value, the rest of the EU 10 % and other countries 35 %. Industry as a whole made 676,170 tonnes of cheese in 2023, so protected names are the smaller part, and the country imports three times more cheese than it exports: 361,700 tonnes against 117,419. 67

How to choose. Manchego comes only from Manchega sheep. A cheese up to 1.5 kg from pasteurised milk ripens at least 30 days, a larger one at least 60, with a maximum of 2 years; with age the taste turns spicy. For other cheeses, look for the DOP or IGP mark and the type of milk on the label. The NHS advises pregnant women to avoid soft mould-ripened cheese unless cooked. 149

Why this matters to you: knowing the region and the milk, the DOP or PDO mark lets you tell a genuine sheep's milk Manchego from mixed-milk "Manchego-style" cheese and know the flavour you will get. 1

Frequently asked questions

How many Spanish cheeses have a protected name?

The EU register eAmbrosia lists 32 Spanish cheese names: 27 PDO (DOP) and 5 PGI.

What are the most famous Spanish cheeses?

Manchego, Cabrales, Idiazabal, Mahón-Menorca, Tetilla and Torta del Casar.

What milk is Manchego made from?

Only from the milk of Manchega sheep, raw or pasteurised. It ripens at least 30 or 60 days depending on weight and milk, up to 2 years.

Is it true that Spanish cheeses are all sheep's milk cheeses?

No. Sheep cheeses dominate the centre, but the north and Menorca make cow's milk cheeses, the Canary Islands goat's milk cheeses, and Cabrales may use mixed milk.

How much cheese do the protected names give?

In 2024 the 32 names gave 36,866 tonnes worth 412 million euros; Manchego made up 56 % of the value (MAPA ministry figures).

Why does Spain have so many sheep's and goat's names?

Cows give about 89 % of the milk, yet only 9 of the 32 names are purely cow's milk. Sheep's and goat's cheeses are closely tied to their places and rules.
