Tillamook Cheddar
Tillamook Cheddar is the everyday cheddar range of the Oregon co-op brand Tillamook: Medium, Sharp and Extra Sharp in blocks, slices, Farmstyle shreds and snacks.
Tillamook Cheddar is the main cheddar range of the Tillamook brand, owned by the farmer co-operative Tillamook County Creamery Association in Oregon, USA.
Cheddar is a hard cheese made from cow's milk. In this range it is graded by strength: Medium is younger and milder, Sharp is stronger, and Extra Sharp is aged longer and has the boldest flavour of the three. Here sharpness only describes ripening: regular cheddar contains no pepper or spice.
The range comes as blocks, slices, Farmstyle shredded cheese and snack portions. Blocks suit cheese boards and cutting, slices go into sandwiches and burgers, shreds work for pizza, pasta, bakes and sauces, and snacks are for eating on the go. Medium melts more smoothly, while Extra Sharp gives dishes a stronger taste.
Keep the cheese in the fridge and wrap it tightly once opened. Other cheeses of this class are listed under Hard cheeses.
Why it matters to you: when a recipe calls for sharp cheddar, look for Sharp or Extra Sharp on the Tillamook pack.
