Tillamook Farmers' Collection is a range of aged and flavoured cheeses from the Tillamook brand, owned by the farmer co-operative Tillamook County Creamery Association in Oregon, USA.
Most of the range is cheddar, a hard cow's milk cheese. Examples from the official page: aged extra sharp white cheddar; hickory smoked cheddar; and an English-style sweet cheddar. There is also a spicy habanero jack, a softer American cheese whose heat comes from chilli rather than from ageing.
White cheddar differs from yellow only in that no annatto colouring is added; the flavour comes from ageing. The smoked cheddar has a smoky aroma, while the English-style cheddar is milder with sweet notes.
