π Tsolikouri
A white Georgian grape from Imereti and Samegrelo that gives fresh wines.
Tsolikouri is a white Georgian grape from western Georgia. It grows in Imereti and Mingrelia, and also in Guria, Racha and Lechkhumi. It is one of the best-known white grapes of the country alongside Rkatsiteli.
Wine from Tsolikouri is pale and fresh with moderate acidity. The aroma recalls flowers, apple and citrus. It can be made in two ways. The first is European: gentle pressing and fermentation in steel or oak vessels, giving a light wine. The second is traditional: fermentation in clay qvevri together with the skins, and then the wine becomes golden, tannic and rich.
Imereti is the main district of the grape. It is used there in several designations, including Sviri, and in Lechkhumi it is the grape of the semi-sweet Tvishi.
Tsolikouri belongs to Georgian wine and to the general list of grapes. It shows that Georgia has both light and ancient styles.
