🍷 Vin cuit

Type of wine ✔ Checked: 10.2026 · sources: 6 Updated:

A sweet Provençal wine from boiled-down must, drunk at Christmas.

Vin cuit is a sweet wine from Provence, in southern France. The name means “cooked wine”. It is made from grape must that is boiled down until part of the water has evaporated. The must becomes thick and sweet, and only then is it fermented.

In Provence vin cuit is a traditional Christmas wine. It stands on the table among the “thirteen desserts”, the set of sweets served at Christmas. The wine is usually amber, with notes of dried fruit and caramel.

A similar wine exists in Italy, where it is called vino cotto. Both come from the old habit of boiling down must to get sweetness, back when sugar was not found in every home.

Vin cuit is a type of wine rather than the product of one area: it is made in several places in France, but it is most closely linked with Provence. Sweet wine is served in small amounts, as a dessert.
