Afeltra Pasta Fatta a Mano

Afeltra Pasta Fatta a Mano is the handmade pasta line of the Afeltra factory in Gragnano. It is built around hand-rolled fusilli, which the company calls the most typical and authentic shape of the Gragnano tradition. According to Afeltra, the method has not changed for more than 400 years and is handed down from generation to generation.

With a quick, precise movement, a fusillaia winds bucatini – a long thin tube with a hole – around a steel rod. It takes years of experience: pressing too hard closes the central hole, which matters for the pasta's digestibility, while moving too slowly fails to produce the typical twisted shape. For this craft the factory has set up the Presidio dei Fusilli a Mano di Gragnano, a dedicated space where the craftswomen make the pasta every day.

The pasta is made from Italian durum wheat without additives and dried slowly. Handmade fusilli have a rough texture and hold sauce well, from delicate dressings to rich ragù. This is pasta for special dishes and for anyone who values Gragnano's craft traditions.
