Afeltra Biologica 100% Grano Italiano is the organic dry pasta line of the Afeltra factory in Gragnano. It is Pasta di Gragnano IGP made from organic semolina of 100% Italian durum wheat and spring water from the Lattari Mountains. According to the company, the organic semolina from Apulian fields is checked with particular care and is free of pesticides.
The process is the same as for Afeltra's classic line: the dough is extruded through bronze dies, giving a rough surface, and dried slowly in static cells for 2–3 days at no more than 50 °C. There are no additives.
The organic line has eight shapes: spaghetti, linguine, rigatoni, penne rigate, tortiglioni, mezzi paccheri, Vesuvio, a volcano-shaped short pasta typical of Gragnano, and pasta mista, a mix of shapes for dishes with beans or chickpeas. The pasta is sold in 500 g packs.
The line is meant for people who choose organic food but want classic Gragnano pasta, for tomato sauces and dishes with vegetables, legumes, fish and seafood.
