🏷️ Ausbruch
An Austrian sweet wine from Rust made from berries with noble rot.
Ausbruch is an Austrian sweet wine from the town of Rust on Lake Neusiedl. It is made from berries affected by noble rot. It is one of the region's oldest styles.
Rust lies in Burgenland in eastern Austria. In autumn, mists hang over the lake while the shores can be warm, and noble rot develops on the berries. The berries dry slightly and their sugar concentrates. The Austrian system of Prädikat wines places Ausbruch among the sweeter levels. The must reach at least 27 degrees on the KMW scale. That is higher than in plain late harvest but lower than in the system's sweetest level.
Ausbruch resembles Tokaji Aszú from neighbouring Hungary, and in the past the two wines were regarded as kin. The wine is thick and golden, with notes of honey, apricot and dried fruit. It is served in small portions with desserts, pâté or blue cheese. The name is protected, and Rust is proud of this wine as part of its history and culture.
