🍷 Tokaji Aszú
Sweet Tokaji made by steeping nobly rotten berries in young wine.
Tokaji Aszú is a sweet wine from Tokaj in Hungary. It is made from berries affected by noble rot: they dry on the vine and become very sweet. These berries are picked separately, crushed into a soft paste and covered with young wine or must.
By the rules Tokaji Aszú has at least 120 grams of sugar per litre and is aged at least three years, including time in barrel. In the past sweetness was shown in puttonyos, that is, baskets of berries added to a barrel. Today this measure is tied to sugar content.
Other Tokaj wines stand beside it: Eszencia, Fordítás and Máslás. All are linked to noble rot. Aszú is made in Hungary and in a small part of Slovakia. Similar wines from overripe berries exist in Austria, where they are called Ausbruch. It is one of the best known sweet wines of Europe.
