Protected cheese name ✔ Checked: 10.2026 · sources: 3 Updated:

Also known as: Podhale bryndza, Polish bryndza

Bryndza Podhalańska is a Polish soft rennet cheese with PDO status, made in Podhale from Polish Mountain Sheep milk, with up to 40% Polish Red cows' milk.

Bryndza Podhalańska is a Polish soft rennet cheese protected in the EU as a PDO (eAmbrosia file PDO-PL-0450, protected since 18 February 2005). Its colour is white, creamy-white or with a willow-green shade; the taste is strong, salty or slightly salty, sometimes slightly sour.

The milk comes from Polish Mountain Sheep (Polska Owca Górska). Cows' milk, if used, comes from Polish Red cows (Polska Krowa Czerwona) and may not exceed 40% of the milk. The milk is renneted, the curd is broken up, the whey is separated and the cheese mass is left to drip; it is then seasoned and fermented, broken into small chunks and mixed with salt. It is made only from May to September. The specification sets water content at no more than 60%, dry matter at no less than 40% and fat in dry matter at no less than 38%.

It is produced in the Nowy Targ district, the Tatra district and six municipalities of the Żywiec district (Milówka, Węgierska Górka, Rajcza, Ujsoły, Jeleśnia and Koszarawa), the region traditionally called Podhale. According to the specification, the oldest references to bryndza in this area date from 1527. Only producers on a list checked by the inspection body IJHARS may make it; packages carry the name and the PDO logo.
