Ducato d'Amalfi
Pasta factory in Gragnano, Campania, making Pasta di Gragnano PGI from Italian semolina and Monti Lattari water, bronze-drawn and packed by hand.
Ducato d'Amalfi (Pastificio Ducato d'Amalfi Gragnano) is a pasta factory in Gragnano, the town near Naples in Campania known for its dry pasta, at Via Ponte Trivione. It specialises in artisanal Pasta di Gragnano PGI, the EU protected geographical indication for pasta from this town, and is a member of the Pasta di Gragnano consortium.
According to the company, the pastificio was born from a shared idea of five women who wanted to create a pasta factory unlike the others, combining old traditions with modern technology; today it is led by Chiara, one of the founders. Production is guided by master pasta maker Vincenzo Di Massa, who has worked with semolina since the age of fourteen, and chef Domenico Stile acts as brand ambassador.
The pasta is made from durum wheat semolina of 100% Italian wheat and spring water from the Monti Lattari, following the Pasta di Gragnano PGI specification. After kneading, the dough is drawn only through bronze dies and dried slowly, then cooled and packed by hand within 24 hours in recyclable packaging.
The range comprises the Pasta di Gragnano IGP line – from spaghetti, linguine and bucatini to paccheri, calamarata, tortiglioni, Vesuvio and scialatielli – and Pasta BIO, nine organic shapes. Visitors can tour the factory with a multimedia 4D path, a tasting room and a company restaurant. All its pasta is dry durum wheat pasta.
