Organic dry pasta by Ducato d'Amalfi from durum wheat semolina: nine shapes including spaghetti, linguine, tagliatelle, penne and rigatoni.

Ducato d'Amalfi Pasta BIO is the organic line of Pastificio Ducato d'Amalfi, a pasta factory in Gragnano near Naples. It has nine shapes: spaghetti, linguine and tagliatelle among the long pasta, and eliche, short fusilli, mezzi paccheri, penne rigate, rigatoni and Vesuvio among the short ones.

According to the product pages, the BIO shapes are made like the rest of the company's pasta: durum wheat semolina kneaded with spring water from the Monti Lattari, drawn through bronze dies and dried slowly, then packed by hand. The company does not separately state PGI certification for this line, so it is treated here as organic Gragnano pasta rather than as a PGI range.

The shapes cover everyday cooking: spaghetti and linguine for tomato, seafood or garlic-and-oil sauces, tagliatelle (made without egg) for meat ragù, penne and rigatoni for baked pasta and arrabbiata-style sauces, fusilli and eliche for vegetable sauces and pasta salads, and Vesuvio, a pointed shape named after the volcano, for fresh Mediterranean sauces. The line belongs to dry durum wheat pasta.
