Pastificio Gentile
A Gragnano pasta maker whose brand dates from 1876, owned by the Zampino family and producing Pasta di Gragnano PGI.
Pastificio Gentile is a pasta maker in Gragnano, Campania. The name Gentile dates from 1876 and comes from the owners of that time. In the 1980s the Zampino family bought the brand, and it still runs the business. The company stresses its ties to Campania and to Gragnano, the "city of pasta", where it says all production takes place.
At first the pasta maker Natale Zampino concentrated on a single shape, hand-made fusilli: the dough is wound around a thin metal rod (ferretto) and dried slowly. As the business grew, other long and short shapes followed.
Today the core of the range is Pasta di Gragnano PGI, a dry durum wheat pasta. The official site stresses Italian grain, and for the wholegrain range it mentions bronze dies and slow natural drying by the company's own "Cirillo method".
The ranges are Pasta di Gragnano IGP (spaghetti, spaghetti alla chitarra, linguine, bucatini, tagliatelle, pappardelle, mafalde, long ziti, manicotti, lasagne and fusilli) and Pasta Integrale Biologica, an organic wholegrain pasta. Besides pasta, Gentile sells organic stone-milled durum wheat semolina from southern Italy, tomato preserves, olive oil and baked goods, and has its own farm and shop in Gragnano.
