Also known as: tortiglione

Dry pasta tubes with a spiral pattern, one of the varieties of maccherone; De Cecco's n° 23 cooks in 11 minutes.

Tortiglioni are a dry pasta shape, one of many varieties of maccherone. De Cecco describes maccherone as one of the oldest types of pasta, originating from Naples, and says the name tortiglioni comes from the Vulgar Latin tortillare, "to wrap in a spiral": it refers to the shape and to the characteristic pattern left by the lathe (die) used in pasta production.

Under Italian law (DPR 187/2001, art. 6), dry pasta is made from durum wheat semolina.

De Cecco's Tortiglioni n° 23 come in 500 g and 3 kg packs and cook in 11 minutes (al dente in 9). The producer calls the shape versatile and very original, best suited to full-bodied sauces: excellent with succulent meat-based sauces, also very good with tomato sauce or vegetable and tomato sauces, and particularly suitable for oven-baked dishes.
