Fava bean flour

Ingredient ✔ Checked: 10.2026 · sources: 4 Updated:

Also known as: Faba bean flour, Broad bean flour, Faba bean protein

Flour from dried fava (broad) beans (Vicia faba), rich in protein and naturally gluten-free; it and faba bean protein go into high-protein pasta.

Fava bean flour is flour milled from dried fava beans, also called broad or faba beans (Vicia faba), one of the oldest cultivated legumes of the Mediterranean and Middle East. In pasta it is used to raise protein, either as whole flour or as faba bean protein concentrate.

For flour, the dry beans are cleaned, dehulled and finely ground; for protein, the flour is further separated into a protein-rich fraction and starch. Dried fava beans contain roughly a quarter of their weight in protein and plenty of fibre, and they have no gluten.

In the products described here, fava bean flour is the first ingredient of Delverde High Protein fusilli and sedani, blended with wheat protein, pea protein and fibres. Recheis Lower Carb pasta adds about 22% faba bean protein and some pea flour to durum wheat semolina. Because these recipes contain wheat, they are not gluten-free; only pasta made purely from legumes can carry that claim (no more than 20 mg of gluten per kg under Regulation (EU) No 828/2014).

Fava beans are not among the 14 allergens of Regulation (EU) No 1169/2011, but people with G6PD deficiency, the cause of favism, are advised to avoid them. Fava bean pasta has a nutty, slightly bitter taste and firm bite; cook it for the time on the pack and serve it with vegetables, olive oil or tomato sauce.

Frequently asked questions

Is pasta with fava bean flour gluten-free?

Only if it contains no wheat. Fava beans have no gluten, but Delverde High Protein and Recheis Lower Carb also contain wheat protein or durum wheat semolina.

Who should avoid fava bean pasta?

People with G6PD deficiency (favism) are advised to avoid fava beans, and people allergic to other legumes should be cautious.

Is it true that faba bean protein is the same as fava bean flour?

No. Flour is the whole ground bean; faba bean protein is a concentrate separated from the flour and used to raise the protein content of wheat pasta.
