🥃 Hamburger Kümmel
A caraway liqueur made only in Hamburg: agricultural spirit with caraway seeds, natural flavourings and sugar, at least 32% ABV, no colourings; EU protected name since 1989.
Hamburger Kümmel is a strong caraway liqueur made only in the Free and Hanseatic City of Hamburg. Agricultural spirit is flavoured with caraway seeds, sometimes with other herbs and spices, then sweetened and diluted with water. The finished drink is at least 32% ABV, noticeably stronger than an ordinary liqueur.
Rules. The name has been protected in the EU since 1989, already under the first European regulation on spirit drinks. According to the technical file, Kümmel is clear, colourless or slightly yellowish, with a mild or pronounced caraway aroma. Besides caraway, only natural flavourings are allowed, and no colourings are added. The caraway itself need not come from Hamburg: it is grown, for example, in East Frisia and the Netherlands.
Production. Caraway seeds and other plants are mixed with spirit and water, and the extract is left to mature in vessels. It is then blended with spirit, sugar is added in an amount that depends on the style of the brand, and the drink is diluted to drinking strength. If needed, it is filtered.
Tradition. Caraway has long been a kitchen spice of northern Germany, and Kümmel has been made in Hamburg since at least the early 19th century. Unofficially it is called the national drink of the city and is served at the City Hall at official receptions. From the 1960s, agreements Germany concluded with France, Spain, Greece and Switzerland also protected the name.
Why this matters to you. The word 'liqueur' may be misleading: Hamburger Kümmel has at least 32% ABV, almost like vodka, so even a small glass contains a lot of alcohol, and the sugar masks the strength. The WHO reminds us that there is no safe level of alcohol consumption.

Frequently asked questions
Is it true that Hamburger Kümmel aids digestion?
No. Caraway is an everyday kitchen spice, but in the EU drinks above 1.2% ABV may not be claimed to benefit health, and alcohol itself does not aid digestion.
What is the strength of Hamburger Kümmel?
At least 32% ABV. This is the requirement of the PGI technical file, twice the EU minimum for liqueurs (15% ABV).
Where is Hamburger Kümmel made?
Only within the Free and Hanseatic City of Hamburg; the caraway may come from other regions.
How does it differ from Berliner Kümmel?
Both are caraway drinks with an EU protected name since 1989 and a minimum of 32% ABV; the difference lies in the city of production and in the recipes of individual brands.
Are colourings allowed?
No. The technical file forbids colourings and other food additives; the colour ranges from colourless to slightly yellowish.
