🥃 Norwegian aquavit (Norsk Akevitt)
Norway's GI: aquavit from Norwegian potato spirit, aged in casks for at least 6 months; 37.5-60% vol.
"Norsk Akevitt" (Norsk Aquavit, Norwegian Aquavit) is Norway's geographical indication for aquavit, registered in the EU by Regulation (EU) 2020/156. Its raw material sets it apart: the base spirit is made from potatoes, at least 95% of them grown in Norway, whereas other aquavits are usually made from grain spirit. The strength is 37.5 to 60% vol.
Production has five stages: potato spirit of at least 96% vol., distillation of the spices, blending before ageing, cask ageing and blending before bottling. The potatoes are cooked, the starch is broken down with barley malt enzymes or others, then fermented and distilled. The spirit is then redistilled in copper stills with caraway and/or dill, often also with anise, coriander, fennel, star anise or peel.
Ageing is mandatory: at least 6 months in casks of up to 1000 l or 12 months in larger ones, traditionally oak casks that previously held sherry, madeira or port. Sugar may be added only so that the dry extract does not exceed 15 g/l; colour is adjusted with plain caramel. According to the specification, this aquavit is traditionally drunk neat, at room temperature.
Ageing is linked to the Lysholm family of Trondheim: in 1805 five oak casks of aquavit were shipped to the East Indies and came back unsold, but the drink turned out smoother. Later aquavit was shipped in casks across the equator to South America together with clipfish, which gave rise to the "Linie Aquavit" brand: "linie" means crossing the equator.
Why it matters to you. The words "Norsk Akevitt" guarantee Norwegian potatoes and cask ageing. "Linie" is a brand name and a story of sea ageing, not a separate category. WHO: there is no safe level of alcohol consumption.

Frequently asked questions
How does Norwegian aquavit differ from others?
By its potato base spirit (at least 95% Norwegian) and mandatory cask ageing: from 6 months in casks up to 1000 l or from 12 months in larger ones.
What does "Linie" mean on aquavit?
It is a brand whose name refers to crossing the equator: aquavit was shipped in casks to South America and back, and the journey softened the taste.
Is it true that "linie aquavit" is a separate EU category?
No. The EU has the category "aquavit" (24) and the geographical indication "Norsk Akevitt"; "Linie" is a trademark with a history of sea ageing.
How much sugar can be added to Norwegian aquavit?
Little: the dry extract of the finished drink may not exceed 15 g/l.
What casks is Norwegian aquavit aged in?
Traditionally oak casks that previously matured sherry, madeira or port; new casks are used too.
