🍷 Marsala Vergine
The finest dry Marsala, aged without any added must.
Marsala Vergine is one of the strictest styles of Marsala, the fortified wine of Sicily. It is dry and aged for a long time, with none of the added must that sweetens and colours other types of Marsala.
The wine comes from western Sicily, around the town of Marsala. White wine from the island is fortified with grape spirit and then left to mature in casks. For Vergine the minimum ageing is five years. If it has aged ten years or more, it is called stravecchio.
The taste is deep and dry: nuts, dried fruit and a light bitterness. Such wines are often blended by the solera principle, where young wine is added to older wine in a row of casks. Vergine is a special case of Marsala, so it ties to the general idea of Marsala and to Italian wine.
It is usually served after a meal in small portions. Its alcohol level is higher than that of ordinary wine.
