Mulino
Mulino – Casa della Pasta: pasta maker in Gragnano using ancient wheat varieties grown organically in Apulia and stone-milled on its own fields.
Mulino – Casa della Pasta is a pasta maker in Gragnano near Naples that controls the whole chain from field to pasta. It is listed as Pastificio Il Mulino among the members of the Pasta di Gragnano consortium. The name means "mill", and milling is central to the project.
According to its official site, Mulino grows ancient wheat varieties – Khorasan, Saragolla and Senatore Cappelli – on its own fields within the Alta Murgia National Park in Apulia, using exclusively organic farming. The grain is stone-milled in small batches in a mill set among the fields; unlike cylinder milling, stone milling keeps the bran and avoids overheating the grain. The flour is milled throughout the year in step with pasta production and is not stored for long. For the 2025–2026 season the company uses a blend of the three varieties harvested in summer 2025.
The pasta itself is made in Gragnano with bronze dies and slow extrusion, which give a very rough surface, and spring water from the Monti Lattari. It is dried slowly at a maximum of 40 °C for an average of 60 hours, and each pack is folded and sealed by hand.
The brand currently offers a single range, Mulino Pasta, shown with shapes such as spaghetti and rigatoni; its online shop is announced as coming soon. The founding year is not stated on the official site. The pasta is a type of dry durum wheat pasta made from ancient grains.
