Rigatoni

Pasta shape ✔ Checked: 10.2026 · sources: 3 Updated:

Also known as: rigatone

Large ridged tubes of pasta; De Cecco and Barilla describe them as a traditional shape from Rome.

Rigatoni are large tubes of pasta with a ridged surface; according to Barilla the name is inspired by riga, “ridge”. De Cecco calls them a typical traditional pasta of Rome with a large diameter and thickness, and Barilla also says the shape was born in Rome.

Cooking times: Barilla 12–13 minutes, Garofalo n.35 (bronze-drawn) 13 minutes, De Cecco n.24 14 minutes (12 for al dente).

De Cecco recommends tomato or vegetable sauces but above all meat sauces: slow-cooked sauces with meat and mushrooms, beef and pork, sausage or giblets; the pajata recipe is a classic. Any sauce liquid enough to get inside the pasta and be trapped by the ridges suits it. Barilla suggests chunkier meat or vegetable sauces, a mushroom cream sauce, tomato and spicy sauces, and baked pasta al forno. Garofalo suggests meat sauces, Neapolitan baked rigatoni and amatriciana.
