Setaro
Family-run artisanal pasta maker in Torre Annunziata, Campania, founded in 1939, producing dry pasta from Italian durum wheat semolina.
Setaro is a family-run artisanal pasta maker in Torre Annunziata, near Naples. The story begins in 1939, when Nunziato Setaro, who until then had been hauling semolina, bought a 19th-century building of volcanic stone and started making pasta with his sons. Today the business is run by his grandsons Vincenzo, Nunziato and Giovanni.
Torre Annunziata is an old pasta town: mills appeared here in the 16th century, and the mild climate and sea breeze once dried pasta on the town's roofs and pavements. Setaro keeps this tradition alive but dries its pasta in cells that recreate natural drying, slowly and at low temperature.
The dough is made only from water and semolina of Italian durum wheat; Vincenzo Setaro selects the semolina himself from trusted mills. The pasta is shaped on a Braibanti press that has been in use since 1939, fitted with bronze dies that leave a rough, porous surface. Packs are filled by hand.
The range covers dry durum wheat pasta in several groups: long pasta (spaghetti, linguine, bucatini, vermicelli, pappardelle), short pasta (penne, rigatoni, ziti, gemelli), small soup pasta (ditalini, stelline), special shapes (paccheri, orecchiette, strozzapreti, scialatielli, farfalle), 60 cm long pasta and oven pasta (lasagne sheets, cannelloni, conchiglioni). Two further ranges are Setaro Integrale e Bio and Setaro Pasta Aromatizzata.
Setaro is not a Pasta di Gragnano PGI producer: Torre Annunziata lies outside the area of that protected name.
