A Croatian sweet wine from dried grapes from Dalmatia.

Prošek is a Croatian sweet wine from dried grapes from Dalmatia. Dalmatia is a coastal region of Croatia on the Adriatic Sea. The wine belongs to the category of straw wines.

Bunches are cut ripe and laid on mats or straw, or hung in a ventilated room. There they dry for several weeks, becoming almost raisins. The sugar concentrates and little water is left. The grapes are then pressed, and the juice ferments slowly. The result is a thick, golden or amber wine with aromas of honey, dried fruit, figs and nuts. Its strength is usually higher than that of ordinary wine.

Prošek uses local Dalmatian grapes. It is made in small amounts, often by families, and is served at the end of a meal, with desserts or cheese, or on its own in small portions. The name resembles Italian Prosecco, and this similarity has caused disputes over names in the European Union. Prošek is part of Croatian wine and Dalmatian culture. It is an example of the traditional way to make sweet wine without freezing or noble rot, only by drying in sun and wind.
