Zvenigora Hard Cheeses
Zvenigora Hard Cheeses are Ukrainskyi, Smetankovyi, Hollandskyi, Zvenyhorodskyi Classic and Extra, and Fihura from Zvenyhorodka.
Zvenigora Hard Cheeses is the range of rennet cheeses from the Zvenyhorodka cheese plant (Savencia group), made from cow's milk.
The producer splits it into classic hard cheeses — Ukrainskyi, Smetankovyi and Hollandskyi — and cheeses made to its own recipes: Zvenyhorodskyi Classic, Zvenyhorodskyi Extra and Fihura. They are pressed Dutch-type cheeses close to gouda and edam, with a springy texture and creamy taste; in international terms, semi-hard cheeses. They are sold as pre-packed pieces, slices and by weight. According to the producer, cheese was made in Zvenyhorodka even before the plant became a cheese-making complex in 1982.
How to use: on sandwiches and cheese boards, in salads, and baked with pasta, potatoes or pizza. Keep the cheese in the fridge in paper or film and take it out 20–30 minutes before serving so the flavour opens up.
